Arkansas Green Beans (a.k.a. Green Beans and Bacon)
Why are they called Arkansas green beans? Well, I don't know for sure, but I speculate that it has something to do with the fact that...
...only in Arkansas do we take a healthy green bean, top it with bacon, and smother it in a butter sauce. Sound good? Well, it is.
Here's the recipe:
5 (15 oz.) cans cut green beans, drained
12 slices bacon
2/3 cup brown sugar
1/4 cup butter, melted
7 teaspoons soy sauce
1 1/2 teaspoons garlic powder
Preheat oven to 350 degrees. Fry bacon until just starting to turn crispy. While bacon is cooling, drain green beans and place in a 9 x 13 glass pan. Cut, crumble, or tear the bacon into small pieces and sprinkle on top of the green beans (I'm a crumble-tearer myself). Melt butter in a small sauce pan. Remove from heat and combine brown sugar, soy sauce, and garlic powder with the melted butter. It should be a thick consistency, but still pourable. Pour it evenly over the green beans and bacon. Bake uncovered at 350 degrees for 30-40 minutes. If your bacon is already crispy, it may only take 30 minutes.
I don't have a picture, but I am making this for Thanksgiving, so I will try to get one then. Enjoy, and Happy Thanksgiving!
Alternative recipe:
For a quick weeknight side dish, cut uncooked bacon into small pieces with kitchen shears and fry in a skillet. When the bacon is done, pour two cans (or however many you want) drained green beans into the skillet with the bacon and grease. Turn on low heat and let them "cook down" a while. When they are almost finished, sprinkle with brown sugar and garlic powder. Stir together and let the sauce thicken. Serve immediately. Delish!
